This started as a Belgian Tripel, but instead of using water, maple sap was used instead. My neighbor collected 10 gallons of maple sap from his property and I brewed up 5 gallons of beer with it. Don't expect maple syrup flavor as none was added. Just sap straight from the tree. After finishing too sweet, dregs from a few Boulevard Saison Brett bottles were allowed to go to work for about a year. Now I like it.
